So things have been so insane around here that I didn’t even realize that it was time for the first check-in for my 101 in 1001 list with Macy over at To Travel and Beyond! I feel like I’ve stayed on track with some of these goals, but I’ve been slacking in other areas. See below for my update

5. Visit the new Harry Potter park at Universal in Orlando.
We got to visit Orlando and the new section of Harry Potter World in January, and I couldn’t be more excited for how amazing our trip was! I’m finally starting to recap our trip, and the first post will be up tomorrow!

20. Go on a trip once a month for a year. (2/12)
As of right now, we should be able to complete this goal in November of this year, but we might even go above and beyond it! We went to NYC in December and Universal Studios in January, and we have plans for a trip once a month through the end of the year! Fingers crossed that everything goes according to plan!
25. Pack for a trip that’s longer than a weekend in a carryon.
I’m giving myself this one for our NYC trip because it was technically longer than a weekend (we were there Thursday night through Sunday afternoon). I’m still hoping to do this for some of the other trips that we’re going on later this year, and hopefully for our Europe trip too!

Houston

28. Try 5 new restaurants. (1/5)
We tried out Underbelly for our Valentine’s Day dinner, and it was delicious! I’m still having dreams about the goat dumplings!

30. Attend a Rockets game.
My company has season tickets to the Rockets, and I had the opportunity to use the tickets in December! We had so much fun, with some amazing seats!

34. Visit 3 of the local breweries. (1/3)
We took a trip to Saint Arnold’s for work one Friday afternoon, and had such a blast! We’ve been meaning to make our way to a few other sometime soon!

House

38. Organize under my sink.
Somehow I managed to do this one weekend when I was trying to find places to store things under my sink! I’m so glad that I finally organized it!
40. Organize my jewelry and find a great way to store everything.
I specifically asked for a jewelry organizer for Christmas, and I love the way that it turned out! The only bad thing is that we’ll have to take it all down in order to paint!

42. Organize the pantry and keep it organized.
I did this right before Christmas, and so far, we’re keeping it organized!
49. Buy a china cabinet and decorate. (1/2 way there!)
I’m giving myself a 1/2 star for this one! We officially bought our china cabinet last weekend, but we don’t have any of the china put away yet! I’m thinking that this will be a good project for a weekend in March!

61. Read 100 books. (15/100)
I had to double check my Goodreads account for this one! I read 7 books in 2015 that counted towards this goal, and I’ve read 8 books so far in 2016! 
62. Complete 3 reading challenges. (1/3)
I had to read like a mad woman, but I successfully completed the SCWBC15 in January of this year by reading 7 books in January! I’m also right in the middle of Erin’s Book Challenge 4.0, and I’ve read 3 of the 10 books for that challenge.

Food

76. Make 10 new recipes. (6/10)
We’ve been doing really good about trying new recipes out, and I think that has a lot to do with Chris not wanting to eat the same thing over and over again. So far we’ve made 2 new Skinnytaste cookbook recipes, this Skinny Turkey & Wild Rice Soup from the Skinny Fork, this Skinny Buffalo Chicken Chili from Skinnytaste, this Chicken and Zucchini Noodle Caprese recipe from Skinnytaste, and this Shrimp Scampi Zoodles from Skinnytaste.

83. Order something I usually wouldn’t order at a restaurant.
I’m going to go on ahead and count this one for our dinner on Friday night. We had octopus, and I definitely wouldn’t have ordered that myself! I did try it, but it wasn’t my favorite thing that I’ve ever eaten.

Health, Fitness & Beauty

87. Work out for three days for three months in a row. (1.5/3)
Starting that challenge with my brother and sister in law has been a great motivator for me! Instead of just working out 3 days a week, I’ve been working out 4-5 times a week, and I feel great!
88. Work out in the morning three days a week for a month. (2/4)
It didn’t necessarily happen in January, but I’m hoping that I’ll be able to achieve this in February!
89. Try 3 new workouts. (1/3)
I’ve been using the Jillian Michael’s 30 Day Shred videos, and loving them so far!
94. Wear lipstick or lip gloss everyday for a week.
Done and still going strong! I completed this during Christmas, but still try to put on lipstick or lipgloss before I get on the bus in the mornings!

Blog

96. Get better about planning blog posts.
Especially with work being crazy, I’ve definitely realized that getting prepped on the weekends is the best way to go! So far, I’m doing a good job with that when I have time!
97. Update old blog posts with better pictures and captions.
I started on this one, and I have a feeling that it’ll be a slow and painful process! So far I’ve updated a few early posts about our Northern California adventure: Here I Go, Northern California Lovin’, The Day We Visited Jurassic Park, and Life Isn’t Always Diamonds & Rose.

98. Develop more relationships with other bloggers.
I’ve officially been on two blates, one with all of the Orlando girls, and the other with Kathleen right here in Houston! Kathleen and I already have another blate planned, and I can’t wait to see if I can meet some other bloggers soon!

    • I know! I get so overwhelmed just thinking about all of my old posts, but I really want to try and really update SEO on my old posts! We’ll see how far I can get, but I think that I just need a few weekends (or a personal assistant!)!

    This list is such fun! I love the travel once a month – we try to do some kind of getaway once a month not a huge trip or anything just to keep things interesting. Packing for a long trip in a carry on is a great goal! Reading 100 books will be awesome!

    • I think that it’s so much fun to just getaway for a weekend, even if it’s just taking a mini road trip to a city nearby. I made Chris talk to me about where we would could go, and I’m pretty excited to make it happen! I’m really nervous about trying to pack for Europe in a carryon, but there’s so many great posts about it, so I’m hoping I’ll be able to!

    • You should totally make one of these lists for your birthday! It definitely helped a lot to divide everything up by sections, so keep that in mind when you make your list 🙂

    • I was surprised by how much I’d actually accomplished over the past three months! Be prepared for more picture overload for Harry Potter because I had such a hard time picking my favorites! I think that I’m making up for not going on a big trip the first year we got married, besides our honeymoon, which is why we’re traveling so much!

  • You are flying through these!! My favorite is the travel every month one. You are killing it with working out and eating healthy, please pass some of that willpower off to me?! I really hope we can meet this year!!

    • I was so surprised by how much I was able to accomplish, but then when I was reviewing my list I realized that I’d actually done quite a few! It takes a lot of willpower, and it definitely doesn’t help when there’s Girl Scout cookies right outside my office! I think that the key is to have a little bit of balance and indulge in something here and there, otherwise I would drive myself crazy! I’m hoping that we get to meet this year too!

    • Thank you! We sat down at the beginning of the year and tried to pick out the places that we wanted to visit this year!

    • I made a big push in January to finish up a lot of books for the SCWBC15, but I have to admit that I’ve kind of fallen off the wagon so far this year. I think my favorites from this year so far have been The Lunar Chronicles, The Kite Runner, and Where’d You Go Bernadette. The Show Us Your Books linkup with Jana Says and Life According To Steph is a great way to get more recommendations than you might be able to read! It’s on the second Tuesday of every month!

    • I remember when I was coming up with my list that it was actually kind of hard to come up with 101 things! But once I divided it up into different sections, it definitely helped out! You should try to do one, I bet that you’d have a ton of Portland things you could add to your list!

  • Highly recommend Karbach if you haven’t been, and I don’t even drink beer! Yay for all of the travel, too!

    • My brother in law works for Saint Arnold, so I kind of feel like I’d be cheating on him a little bit if we go to Karbach. But, I’ve heard that Karbach allows dogs, so that’s a major plus for me!

    • We did try out a couple of recipes that we didn’t like, but that caprese one is amazing! I definitely recommend it! I’m sure the you’ll get around to making your jewelry organizer soon, but you definitely have some other things to be focusing on right now 🙂

    • I really didn’t think that I was going to like zoodles, but I’ve been really impressed with the recipes that we’ve tried so far! One of my favorite food bloggers just put out a new zoodle recipe this week, and I’m hoping to try it next week! Splitting everything out into categories was the only way that I could come up with 101 things!

    • Believe me, I’m just as surprised as y’all are about getting things knocked off my list! You should totally do a 101 in 1001 after you get through you 30 before 30 list! I bet that you could make a really good list of things to do with the new baby too! And I will definitely let you know if we make it up to Ohio! One of Chris’ friends lives in Cleveland, so we could definitely make a trip up there!

  • Dang girl! You’re really making some good progress!! I’m all about traveling with carry-on’s! I’m so impatient and hate waiting for my luggage when I get off a plane.

    • Totally agreed about getting annoyed when waiting for your bag! Because we don’t have assigned seating on Southwest, Chris and I have a pretty good system down so we can make sure we get our overhead bin space for our bags.

I’m totally “blaming” Pinterest for the fact that we’ve been able to try out so many new recipes. I don’t know what I ever did without it before! I have to confess that we’re not the biggest basketball fans, but I feel like you can’t beat the atmosphere of a pro game!

You’re Europe posts were actually where I got a lot of the inspiration for trying to pack for a long time in just a carryon!     • Haha! I try to unpack as soon as we get home, but I have to admit, sometimes it just doesn’t happen and my stuff will just sit there for a week. I love the jewelry organizer that I got because it helps me to really see all of the options that I have.

  • We’re the same exact way with our pantry! What really helped me to want to get organized was the fact that we were having family come over for Christmas, so that meant we’d be cooking a lot and they’d be poking around in my pantry!

  • Our company has some of the most amazing season tickets to the Rockets, and I love that they actually let us low men on the totem pole use them! It really is so funny that Orlando ended up being colder than our trip to NYC was! It really just went with the warm Christmas theme.     • I completely agree! Houston is such a foodie city, that it really shouldn’t be hard to complete that category, but I think that we have trouble breaking away from our favorite restaurants! And Underbelly was so good! We’re already trying to figure out when we can go back, especially since I just found out that it’s BYOB too!
