So things have been so insane around here that I didn’t even realize that it was time for the first check-in for my 101 in 1001 list with Macy over at To Travel and Beyond! I feel like I’ve stayed on track with some of these goals, but I’ve been slacking in other areas. See below for my update
5. Visit the new Harry Potter park at Universal in Orlando.
We got to visit Orlando and the new section of Harry Potter World in January, and I couldn’t be more excited for how amazing our trip was! I’m finally starting to recap our trip, and the first post will be up tomorrow!
20. Go on a trip once a month for a year. (2/12)
As of right now, we should be able to complete this goal in November of this year, but we might even go above and beyond it! We went to NYC in December and Universal Studios in January, and we have plans for a trip once a month through the end of the year! Fingers crossed that everything goes according to plan!
25. Pack for a trip that’s longer than a weekend in a carryon.
I’m giving myself this one for our NYC trip because it was technically longer than a weekend (we were there Thursday night through Sunday afternoon). I’m still hoping to do this for some of the other trips that we’re going on later this year, and hopefully for our Europe trip too!
28. Try 5 new restaurants. (1/5)
We tried out Underbelly for our Valentine’s Day dinner, and it was delicious! I’m still having dreams about the goat dumplings!
30. Attend a Rockets game.
My company has season tickets to the Rockets, and I had the opportunity to use the tickets in December! We had so much fun, with some amazing seats!
34. Visit 3 of the local breweries. (1/3)
We took a trip to Saint Arnold’s for work one Friday afternoon, and had such a blast! We’ve been meaning to make our way to a few other sometime soon!
38. Organize under my sink.
Somehow I managed to do this one weekend when I was trying to find places to store things under my sink! I’m so glad that I finally organized it!
40. Organize my jewelry and find a great way to store everything.
I specifically asked for a jewelry organizer for Christmas, and I love the way that it turned out! The only bad thing is that we’ll have to take it all down in order to paint!
42. Organize the pantry and keep it organized.
I did this right before Christmas, and so far, we’re keeping it organized!
49. Buy a china cabinet and decorate. (1/2 way there!)
I’m giving myself a 1/2 star for this one! We officially bought our china cabinet last weekend, but we don’t have any of the china put away yet! I’m thinking that this will be a good project for a weekend in March!
61. Read 100 books. (15/100)
I had to double check my Goodreads account for this one! I read 7 books in 2015 that counted towards this goal, and I’ve read 8 books so far in 2016!
62. Complete 3 reading challenges. (1/3)
I had to read like a mad woman, but I successfully completed the SCWBC15 in January of this year by reading 7 books in January! I’m also right in the middle of Erin’s Book Challenge 4.0, and I’ve read 3 of the 10 books for that challenge.
76. Make 10 new recipes. (6/10)
We’ve been doing really good about trying new recipes out, and I think that has a lot to do with Chris not wanting to eat the same thing over and over again. So far we’ve made 2 new Skinnytaste cookbook recipes, this Skinny Turkey & Wild Rice Soup from the Skinny Fork, this Skinny Buffalo Chicken Chili from Skinnytaste, this Chicken and Zucchini Noodle Caprese recipe from Skinnytaste, and this Shrimp Scampi Zoodles from Skinnytaste.
83. Order something I usually wouldn’t order at a restaurant.
I’m going to go on ahead and count this one for our dinner on Friday night. We had octopus, and I definitely wouldn’t have ordered that myself! I did try it, but it wasn’t my favorite thing that I’ve ever eaten.
Health, Fitness & Beauty
87. Work out for three days for three months in a row. (1.5/3)
Starting that challenge with my brother and sister in law has been a great motivator for me! Instead of just working out 3 days a week, I’ve been working out 4-5 times a week, and I feel great!
88. Work out in the morning three days a week for a month. (2/4)
It didn’t necessarily happen in January, but I’m hoping that I’ll be able to achieve this in February!
89. Try 3 new workouts. (1/3)
I’ve been using the Jillian Michael’s 30 Day Shred videos, and loving them so far!
94. Wear lipstick or lip gloss everyday for a week.
Done and still going strong! I completed this during Christmas, but still try to put on lipstick or lipgloss before I get on the bus in the mornings!
96. Get better about planning blog posts.
Especially with work being crazy, I’ve definitely realized that getting prepped on the weekends is the best way to go! So far, I’m doing a good job with that when I have time!
97. Update old blog posts with better pictures and captions.
I started on this one, and I have a feeling that it’ll be a slow and painful process! So far I’ve updated a few early posts about our Northern California adventure: Here I Go, Northern California Lovin’, The Day We Visited Jurassic Park, and Life Isn’t Always Diamonds & Rose.
98. Develop more relationships with other bloggers.
I’ve officially been on two blates, one with all of the Orlando girls, and the other with Kathleen right here in Houston! Kathleen and I already have another blate planned, and I can’t wait to see if I can meet some other bloggers soon!
